Leaving town...

When you leave town, take all the veggies and fruit you have and cut them up and freeze them. Here's a pomegranate i took apart before leaving town this last week. Now it's ready for me to use however i want, i can put some seeds in a salad or cook with it, however...and i didn't waste it. I do this with everything before leaving town if it will spoil before i get back.

Great idea! Are there any fruits/veggies that you have found in your experience that don't freeze well? I have company coming this week and I want to freeze ahead some meals. Do cooked potatoes freeze well (I want to pre-make the cutless)?

Do you have an extra freezer at home?

Muslim Wife - I find the only thing that doesn't freeze well (off the top of my head) is cooked potatos...the starch and cold don't do well. Mashed potato's will usually heat back up fine but they don't have that creamy taste they do so i tend not to freeze potatos except in burritos because they don't seem to get affected, i will freeze pakistani aloo gosht and stews but the potatos will fall apart upon reheating. I do freeze mashed potatos after thanksgiving but like i said, they don't taste as good...it's a texture thing. Everything else seems to work just fine. I haven't done cucumber...was going to but ate it instead. :-)

If you want to freeze potatos you can if they are raw. Like cut them up and freeze them but i wouldn't cooked, especially if serving guests (i do for myself sometimes though and smother them in gravy anyway). You can make them the day before though and reheat or if you do choose to freeze, just make sure they are nice and creamy and then when you pull them out, spread butter on top and bake which will make a sort of crust which is delish too.

Organic - i don't! I do have a side by side and it's always maxed out. This entire week was freezer food. Probably half of next week too and then i'll start cooking again for a couple weeks. I need to publish a picture of my freezer and i will soon...
