Recipes

-chili relleno casserole

Also, you mentioned freezing the insides of the breakfast burrito and pasta. How well do cooked pasta and egg freeze? How long will they last and how do you defrost them both? Thanks!

For breakfast burritos and pasta.

I find pasta freezes just fine. Just don't microwave it to defrost. Let it go on it's own or if you have to, cover it so the moisture stays in (and add a little water before nuking).

Potatos don't usually freeze well and the texture gets all messed up but with the breakfast burritos they don't. Don't know why but they don't. The egg is fine. They are delicious warmed up. Trust me.

Most things last in the freezer 3-12 months. But you would eat these before 3 months i'm sure. I make a batch and they are gone in a week or two and that's with 12 eggs! I defrost the burritos in the fridge overnight and then pop in the oven. If it's morning i nuke them but they are better thawed in the oven. Pasta i just set out in the morning for lunch and then mix the sauce in and warm it all up.

I was so bummed i didn't get to make chili relleno casserole. I need to find a hispanic store here because the regular ones don't carry chili rellenos.
